Begin your exploration by riding the trails through Cape Bay's residential and industrial sections until you reach the undeveloped area of Cape Bay. Riders can choose a one-hour ride, a two-hour ride, a sunset ride, or a nighttime ride. The highlight of these rides is the chance to swim in the ocean with your horse--a truly incredible experience. As you ride along the trails through Cape Bay, your guide will point out the flora and fauna around you--the lush vegetation, unexpected cactus, pelicans, snowy egrets, mongoose, lovely butterflies, and migrating whales in June--and the nearby islands of Saba and Statia and the far off islands of St. Kitts and Nevis. Guests can take a one-hour ride through the Cape Bay area or a two-hour ride through the Cape Bay area to the beach at Cole Bay. Or they can enjoy a sunset ride where they can take in one of the island's fabulous sunsets. Romantics will enjoy the champagne night horseback ride. Ride the trails for a nighttime experience and then gather around the campfire on the beach to toast marshmallows and drink champagne. Cape Bay has some of the best snorkeling on the island, and its beauty was showcased in the water scenes from the motion picture Speed II. Villa of the Month: Lune de Miel, St. Martin
Lune de Miel is beautifully decorated in a neutral decor accented with red. The air-conditioned bedroom is furnished with a lovely king-size bed swathed in netting. The elegantly appointed bathroom features a spacious outdoor shower. The sitting area has plasma television, VCR and DVD player, and satellite cable. Just off this area is the comfortably furnished veranda. This outdoor living area overlooks the pool and is the perfect spot for dining al fresco or enjoying cocktails while savoring the island's beauty. The villa has a gourmet kitchen and offers maid service. The closest beach is lovely Baie Longue, named for its long and lovely beach. Restaurant of the Month: Le Marrakech, MarigotLe Marrakech in Marigot blends the exotic with a touch of romance. Guests at Le Marrakech feel as though they have been transported to Moroccan North Africa. The dining room is furnished in typical Moroccan fashion with Moroccan sofas, large mosaic tables, soft draperies, chandeliers, and paintings, all imported from Casablanca, Fez, and Marrakech. The lovely garden has also been transformed -- here diners can enjoy drinks by candlelight in an authentic sultan's tent. St. Martin has a reputation for outstanding cuisine, and Le Marrakech maintains this standard. Le Marrakech serves fabulous Moroccan specialties such as kebabs, pastries, couscous, and tajines. Diners rave about the restaurant's signature dish, a lamb tajine with prunes, honey ginger sauce, and caramelized almonds with cinnamon. Guests can enjoy Moroccan wine and other spirits with their dinner. A common misconception is that Moroccan food is hot and spicy. In fact, Moroccan food uses a blend of spices such as coriander, cumin, saffron, paprika, cayenne, ginger and cinnamon but it is not hot.
